Our A2 Desi Ghee (देसी घी), which is sourced from A2 milk from indigenous cow breeds (देसी गाय), is handcrafted in small batches using the traditional Bilona (बिलोना) method. In this method, A2 milk is first set into curd. The curd is then slowly hand-churned to separate cultured butter (makkhan). This butter is gently heated over a low flame until it turns into pure, aromatic A2 ghee. This process preserves essential nutrients, delivering pure A2 ghee rich in natural antioxidants and healthy fats for improved well-being.

The Bilona Method

The Bilona (बिलोना) method is a traditional Indian process of making ghee that has been followed for generations.

The Steps in the Bilona Method:

Step 1: A2 milk is boiled and set aside to cool.

Step 2: The milk is then set into curd using a natural culture.

Step 3: This curd is then slowly hand-churned to separate fresh butter (makkhan).

Step 4: Makkhan is gently heated over a low flame.

Step 5: It is simmered until it turns into golden, aromatic A2 ghee.

Step 6: The resulting Bilona ghee is strained to remove milk solids, leaving behind pure A2 Desi ghee.

Unlike modern methods that extract ghee directly from cream, the Bilona method is slower and more mindful. It helps retain natural nutrients, flavour and aroma, resulting in ghee that is richer in taste.
