Bilona Ghee vs Industrial Ghee: What the Difference Actually Means

Most ghee sold in India today was made by machine, start to finish, in under an hour. Bilona ghee takes three days. The question worth asking is not which one is better — it is what actually changes between the two, and whether those changes matter to you.

Here is the honest answer.

The Two Processes

Industrial ghee starts with cream. Fresh milk arrives at the factory, a separator spins out the fat, and that fat is clarified into ghee using direct heat. No culturing, no fermentation, no churning. The milk never becomes curd. The process is efficient: a large dairy can move from raw milk to packaged ghee in a single shift.

Bilona ghee starts with curd. The milk is first allowed to culture overnight — traditionally with a small amount of the previous day's curd as a starter, the way a household would do it. Once set, the curd is churned slowly to separate the makkhan (white butter) from the buttermilk. That makkhan is then clarified on a low flame until it becomes ghee.

The difference is not just in steps. It is in what the process does to the milk.

What Changes When Milk Becomes Curd First

When milk is allowed to culture before churning, three things happen that do not happen in direct cream separation.

The fat distributes differently. In fresh milk, fat globules cluster near the surface — which is why cream rises. In curd, the fat is embedded throughout the protein matrix. Churning breaks that matrix open. The butter you recover from curd is structurally different from the cream you skim off the top.

Butyric acid is retained. Curd fermentation produces short-chain fatty acids, including butyric acid, that are either absent or minimal in industrially processed milk fat. Butyric acid is what gives bilona ghee its characteristic smell — the one people describe as "like home" or "like what my grandmother made." It is also the compound associated with gut lining support in Ayurvedic and emerging nutritional literature.

The yield is dramatically lower. Industrial cream separation is efficient. Bilona is not. To produce one kilogram of bilona ghee from A2 milk, you need approximately 25 to 30 litres of milk. Industrial processes recover more fat per litre because they skim directly. This yield difference is the primary reason bilona ghee costs more — not brand markup, not packaging, not margin. The raw material cost alone.

What You Can See and Smell

If you have bilona ghee and industrial ghee side by side at room temperature, the difference is visible.

Bilona ghee is grainy. At room temperature, you can see the granular texture — small white crystals through the golden fat. This is a characteristic of slow clarification. Industrial ghee is uniformly smooth.

The colour is different. Bilona ghee made from grass-fed cows has a deeper yellow from beta-carotene in the feed. Industrial ghee, often made from crossbred or mixed herds on commercial feed, tends toward pale yellow.

The smell is the most immediate difference. Bilona ghee has a strong, warm, almost nutty aroma even at room temperature. Industrial ghee smells faintly of fat and very little else.

What Industrial Ghee Is Good At

This is not a dismissal of industrial ghee. It serves a real purpose.

For high-volume cooking where ghee is a medium rather than an ingredient — deep frying, commercial kitchens, bulk institutional use — industrial ghee is consistent, shelf-stable, and economical. The process produces a product that does exactly what it is designed to do.

The honest distinction is this: industrial ghee is an efficient fat. Bilona ghee is a food.

The Right Question to Ask

When you are buying ghee, the question is not "which brand is best." It is: what process was used, and does that process match what I am buying ghee for?

If the label says "bilona" but the price is ₹300 for 500g, the maths do not work. You cannot make bilona ghee at that price using A2 milk. Either the milk is not A2, the process is not true bilona, or both.

If the label says "bilona" and the price reflects the yield reality — 25 to 30 litres of milk per kilogram — then you are buying what it says.
